Preparation
Step by step:
1. Wash the fresh raspberries and purée the fruit in a blender until smooth. If desired, you can pass the purée through a sieve to remove the seeds.
2. Heat the milk in a small saucepan and stir in the chai powder, or add the freshly brewed chai tea, creating a smooth and evenly spiced base.
3. Add the white chocolate and stir the mixture over medium heat until it has completely melted and blended into the chai milk; sweeten with honey or maple syrup if desired.
4. Place the raspberry purée at the bottom of a heatproof glass or cup, then slowly pour the hot chai mixture over it to create a subtle color gradient; optionally add a freshly brewed espresso and serve immediately.
