Preparation
Step by step:
1.
Preheat the oven: Heat the oven to 175°C (top/bottom heat) and line a loaf pan with parchment paper.
2.
Prepare dry ingredients: Sift the flour, baking powder, and David Rio Chai powder into a bowl and set aside.
3.
Cream butter and sugar: Beat the softened butter and sugar in a large bowl until creamy.
4.
Add liquid ingredients: Add the eggs one by one, then stir in the milk or alternative, mixing until smooth.
5.
Incorporate bananas: Add the mashed bananas to the dough and mix thoroughly.
6.
Finish the dough: Gently fold in the flour mixture until no flour lumps remain. Optionally, fold in chopped nuts or chocolate chips.
7.
Bake: Pour the dough into the prepared loaf pan and smooth the top. Bake the bread for 30–45 minutes. Do the toothpick test: If no dough sticks to the toothpick, it’s done.
8.
Let cool: Let the banana bread rest in the pan for about 10 minutes. Then, remove it from the pan and let it cool completely on a wire rack.
